About me: I am an American citizen from NY. living and working in Mexico for the past 5 years as an International Trade representative of my own company Pacific Sur Freightways Inc. I just can say that I love traveling and write about places I've visited,talk and take pictures of local people,about their customs and traditions . and..who knows .?.eventually put all those experiences in formal writing to show that Mexico that not many people knows about it.

The seafood at this restaurant in Tuxpan,Ver. easily rivals with the fancier places in the country. Here you can taste the famous "sopa de ostion" (a spicy oyster stew),
then move onto"calamar encebollado"( squid cooked with onions,butter and garlic),
or the house "camarones a la diabla"(a spicy concoction of grilled shrimps and chiles), and last but not least, "marinero seafood platter" (a mix of scallops,shrimp,fish,oyster and clams all steamed with white wine).

The mystery of Vanilla- Papantla Veracruz .
Mexico assaults the senses.Is is a country of strong smells,pungeant aromas fill the cofe shops of Papantla and virtually dominate the nearby atmosphere.
the strong aroma of real vanilla is as penetrating as coffe or hot chocolate cooking on the stove.
The aromatic spice was first discovered by the Spanish Conquistadores in Papantla in 1524.It had been cultivated by the Totonaco Indians for centuries.Its flower is an Orchid.
The Spanish were at loss as to what to call this wonderful new spice.The word "vanilla" in spanish is
"vainilla", where a "vaina" is a pod,or a sheath,so,
"vainilla" is a little pod. Each year during the month of April,the yellow vanilla orchids bloom and are pollinated. Papantla, Veracruz is the origin of vanilla.

The emerald green Golf of Mexico is not as transparent as the caribbean sea,due to the great quantity of zoo and phitoplankton that it contains. The plankton is the ideal food of alot of little fishes that in turn attract bigger fish giving way to the continuity of the food chain.
This is the reason why the Golf of Mexico is the habitat of hundreds of sea species. Just in front of Tuxpan shores, it is possible to capture in fairly shallow waters, more than 10 different edible fish,like mouth,yellow tailed,red & spotted snappers,groupers,sea trout,palomets,among others.
You can go fishing in the same manner as local fisherman have always done it,using fisher rods,hooks + baits and follow the tradition to prepare your first catch in a delicious "ceviche",a typical regional dish prepared precisely with rawfish filet marinated with lime juice,seasoned with tomatos,onions,coriander and a pinch of salt & pepper + few slices of hot "jalapenos"
