A good excursion is a trip to the Zaanse Schans (see pages http://www.zaanseschans.nl/). It's not a festival, but 'tradional' part of our country with cheesefactory, wooden shoe workshop etc.

I recommend doing some sightseeing in Haarlem and then take another train 2 stops further to the beach Zandvoort. I had some good times myself there but make sure the weather is permitting. Also a good place if you are into skating.

A lot of people find the flower market in Aalsmeer fascinating - but it means getting up early! See: http://www.floraholland.com

Or a bike trip out to Broek-in-Waterland (10km) is a great way to see typical Dutch houses and countryside.

I can check for you which festival there is in your period of stay. When you stay for longer than a few days i can recommend the beaches due south from Den Helder and the Islands are nice too, but thats if you stay longer. If you want to come back to Amsterdam in the evening i can recommend the beaches due south from Ijmuiden, Bataviawarf en so on. If you have more questions mail me
