Where can I rent a good real Amsterdam bike? I'd hate to rent another one of those obvious yellow bikes!

At Central Station they rent the 'normal' bikes.

true, central station. You can rent a red one (Mac Bike) or a more normal one in blue. The blues ('OV fiets') are to be rent in the basement near the Mac Bike Renting Point.

I would advise against to what both predecessing respondents recommend.
As far as I am aware of, there are no 'normal' bikes as Ingrid calls them available at Am*dam Central Station. That is bcs these particular two paid bike parkings are dominated by the adjacent Mac Bike. And Mac Bike is expensive. The nearest station where these 'normal' bikes are rented out, is Amstel station's underground Fiets Point. They're some €7,50 per calendar day (+ I believe €100 deposit and showing your passport), meaning you don't pay per hour but per opening-hours of the rental station. Obtaining a bike at -say- 12 and returning it at -say- 19:30 would cost the same as having it for the full day the rental station is open. When returning it next morning, they charge another full day.
Then there's the OV-Fiets option that Martijn mentions:
http://translate.google.com/translate?u=http%3A%2F%2Fwww.ov-fiets.nl%2FNSPoort_C01%2FshowModuleItem.asp%3Fcomid%3D22%26modid%3D268%26SessionID%3D7349927606352986921346115212&hl=en&ie=UTF-8&sl=nl&tl=en . It's a system where one can rent blue bikes at stations nationwide, also the unmanned ones. With €2,85 per 20hrs for a max of 60hrs, this is the cheapest possible option. However, one needs to be a member, costing €9,50 per year + another €7,50 for ordering an extra pass if not in possession of a train discount card & Dutch bank account, plus taking up to a few weeks to process. Needless to say this is only a good deal if you are staying for a considerable amount of time, and mean to travel to various destinations by train, unless you know a local enjoying this service. It is very popular, so I wouldn't be surprised if you _would_ be able to find someone.
For you, your best shot will probably be at Vitor's Recycled Bikes:
http://www.recycledbicycles.org/
, Spuistraat 84, +31(0)6-546 81 429. He has a service he calls
http://www.recycledrentals.com/
A bike is only €5 + €50 deposit.

For the also mentioned OV fiets you need to be a member! If you're from abroad the best thing is to rent a bike at McBikes, only 7 euros a day and if your group is 10 or more you get a discount! You can make online reservations. Check out their pages on http://www.macbike.nl/
But the best thing to do is take your bike on the train (6 euros for a dayticket) and come over the the South, so I can take you on off my guided tours around Breda. Enjoy!!!

there are more bikerentals via macbike or dam bike
But all rental bikes have number and/or plates on them.
And be prepared the bike traffic is heavy, locals don't like rental bikes, cause the are slow and don't know the rules. take care riding a bike in amsterdam. it is the best way!

What is your criteria as "good" and/or one being an Amsterdam bike & being opposed to experiencing another Yellow one as well? Hope you find one that suits your colors and cycling without more costs.... ;)

Avoid MacBikes. Expensive. When my sister visits I normally go to www.starbikesrental.com next to central station. They've got typical bikes and they're not bright yellow! They're also one of the cheapest in town. Don't forget to take ID.
