It all depends on what cheap is, the is a Nicaragua chef named Nelson Porta that offers cooking classes, he speaks English since he lived for a long time in the US but i di not know if he will actually teach the class in English. http://www.facebook.com/home.php?#!/profile.php?id=1110626045 this is the link to his facebook page, contact him, he is very good. well have you tried the Escula Nacional de Hoteleria or you can also try the local comedores depending on the neiborhood you can ask for a job there and learn about the Nicaraguan cooking hope this helps.

I do not think that you will be able to find such service here, at least not easily. I never heard from a cheap service on such kind of thing. I'm not agree that private clases from Nelson Porta would be cheap.
That I can suggest you is to buy a good Nicaraguan Recipe Book like 50 AƱos en la Cocina and practice later in your house, but unfortunatelly that book is only available in Spanish language.
