Hi,
Just take the train from Schiphol to Amsterdam Central, it is about 15 minutes. Forget about renting a bike, all the administration will eat away your time. I would advice walking to the Nieuwmarkt or taking tram line 5 to Museumplein and quickly visit the Van Gogh Museum, then take line 5 back and the train back to Schiphol.
Enjoy!

5 hours is not much, take a train the Amsterdam Central Station, hope there are no delays either way, the bike thing will take up too much time. You may want to hop onto one of those canal trips by boat. They are outside of the station.
Personally I don't know if I would opt for this having only 5 hours to spare.

Trains go every 10 minutes to Amsterdam Central Station. From the station you can do a boat tour. This takes 1.5 hours. If you have time left, you can walk to damsquare (5 minutes from the station)
If something goes wrong with the train (delay or something) you can take a taxi to the airport. The ride is about 20 minutes and should not cost more then 40 euro (train is about 7 euro return)

I'm not sure what type of things you enjoy- but take the train from Schiphol to Amsterdam Centraal station, and from there you can take a tram to various parts of the city. I would probably also suggest walking to Leidseplein, plus the Anne Frank house is close by, but usually full on weekends. You could avoid longer lines by purchasing tickets online ahead of time.

You will see pretty much nothing, i'm affraid.... Indeed hop on a train and just indulge yourself into the city and enjoy the streets and canals of the ancient town.

Boat tour would be the best. They leave from infront of central station (which is where the train from Schiphol takes you). You can do a 1.5 hour tour which will give you a feel for the city and show you the highlights. After this, you'd better head back to the airport!
