I would say, leave the tourist trail for just one day. Take a train to a 'normal' Dutch, English, French or whatever city, find a pub and drink coffee all day and talk to locals. If you do the -wonderful- tour you intend to do, you will mostly find other tourist and the modern culture you will find is tourist culture. Nothing wrong with that, you are going to see great things and meet nice people (That is the way I travel when I am Asia, a lot of travelling, a lot of highlight) but it would be nice if you would experience normal life, even if it's for just one day.
For Amsterdam I would

Mmmm... I wasn't done yet. For Amsterdam I would say you take the obligatory canal boat tour, visit the Anne Frank House and the Van Gogh museum. Another, slightly less touristy thing I would recommend is the Amsterdam Historical Museum,it will give you some feel for the city's history. You can also take a historical walk.
The other day you could spend in, say, Utrecht. It is a lovely Dutch city, just 35 minutes from Amsterdam. It also has canals and fine museums, but hardly sees tourists. Go shopping there, (but leave the shopping mall around the station straight away)sit in the sun, drink tea, beer, coffee, eat, wander around in the library and have a nice day!

Hey there,
that's a really nice holiday that you're planning. Your time in Amsterdam you can spend half day in the Madame Tussuad's museum if you haven't been there yet. It would be cheaper for you to go there instead of London. Furthermore, it's good to have the boat tour around the canals and a walk in the Red Light district is obligatory since they are going to shut it all down soon. Also I think that the amusement park at the Dam square is already open. Go there you'll have fun :) In Paris, if you want to see something historical go to the Versailles castle it's worth it. And of course you can't miss the Eiffel tower and Arc de Triumph, the Louvre, Notre Damme, etc. In Greece where exactly are you planning to go? If you're staying in Athens then go to the Acropolis and also they have a very nice museums and ruins all around the city. I recommend visiting Meteora, it's a monastery complex but it's unique with its location and amazing spirituality that even a person who doesn't believe in God can feel. Only thing is that it's a little bit further from Athens. LONDON, baby! :D I just visited it myself 2 weeks ago. Amazing city! Go to the free city tour. It starts at 9:00 or 10:00 in the morning from the Hyde park corner. It takes about 3 hours so you'd better wear good shoes. The guides are all so good and so passionate when they talk so the walk will be definitely enjoyable. And they take you through almost every famous place in London. You can visit the National museum and the national gallery. They are both free entrance and you'll see some really amazing stuff. In Rome, you can't miss the Colosseum and the Vatican city and the Piazza San Pietro(St Peter's square). If you have time go shopping ;) For Belfast unfortunately, I can't give you any tips cause I still haven't been there but I'm sure there'll be someone to answer to you about it.
Enjoy your holiday,
Sima

for amsterdam use the canalbus for the first day. This is a hop on hop off boat that has stops at all major tourist attractions. Visit the ones you like. For the next day I would not plan anything....Maybe revisit something you have seen at a glance the first day.(canalbus costs about 19 euro per 24 hours pp)

you've received great tips on what to see but cramming everything in 2 days might just be stressful, specially if you have schedules to catch. I suggest you add another day to each city. :-)

Don´t miss the snackbar Febo. Also make sure you choose the right hostel where you can meet good people. Good hostels have a bar included and other activities such as biljards or TV. Follow the crowd and you will be ending up in a lot of interesting places.
