The typical chilean "folk" music is called "cueca" althought there are many traditional kinds of dances depends on the location within the country.

Some typical dishes: empanadas (which is like a meat pie); corn pie; cazuela (very traditional, is a soup with meat or chicken meat, carrots, potatos, rice and pumpkin); humitas (very nice, is grounded corn wrapped in the leaves of the corn plant). If you go southern Chile the "Curanto" is a very typical meal: local people dig a hole in the ground and cover it with live coals, then they put inside seafood, meat, potatos and all this is covered with huge leaves of a local plant called "nalca".

I think it depends on the area where you'll be staying:
North: Altiplanic music and lots of quinoa
Center: Cueca music and empandas, cazuelas, charquican, pastel de choclo
South: Curanto and sea food with chilota music

chile is known for been a tricontinetal country, that means chile is placed in america's continent, oceania's continent and the antartic. it also have sea shore across the hole country, so seafood is very important to chileans. also, and since chile is a very long country, you can find different climates, so food change acording to that also.
in the north you can find lots of fruits and seafood. you can made it grilled or un soups. theres also fruits like mango and papaya.
in the center of the country the ground is good to plant fruit trees, such as apple, pears, grapes, berries, apricotes. basically its a very good area for agriculture. the tipical food in that place are (for example) pastel de choclo (corn pie) empanadas (you can made those with meat, fish, cheese, crab, etc) humitas (made of corn) and last but not least is the cazuela (soup with different vegetables like green beans, corn, carrots, with rice, potatoes, meet.
in the south of chile, cow meet its very important, that area is known because of its good quality of meat, and dayries. also there some influences of german colonies, specially in pastryes. one of the most known dishes is curanto, wich is baked in a whole in the ground. that dish has chicken, seafood, pork, potatoes, etc. its tipical from an island called chiloe.
