Hola,
Yes, there are different spots where you can go fishing. I personally could arrange something for you at one of these beaches in Tola (up north from San Juan del Sur).
If are interested, I can get you info about it.

Dear User 185655, in response to your question about fishing in Chinandega: certainly you can fish in Aserradores area where the mackarels, snappers, groupers, catfish, sailfish, dorados and several other can be fish. I am also a fisherman and understand the need for fishing!
The pricing for 6 hours fishing is US$120 for up to four people (including drinks, some snacks, fishing gear, bait and boat). The boat is an open roof with a 45 hp offboard motor. In the area you can have good meals, a simple but clean room, surf, horse ride and enjoy your visit. You can contact me for a booking at info@thetourstogo.com (or visit www.thetourstogo.com)

In Nicaragua you can enjoy various types of fishing ... from Guapotes (jaguar cichlid) fishing in the Great Lake of Nicaragua and other lakes and lagoons, to Tarpon fishing in the San Juan River and mangrove areas on the Caribbean coast to fishing for Picudos (Marlins & Sailfishes) in the Pacific, including Mahi Mahi (Dolphing Fish), mackerels, rooster fish, wahoo and other interesting species.
The main problem or constraint here may be to get resources for fishing boats if you do not bring your own or your friends here doesn't have any. But I'm pretty sure that you could arrange some rental boats in Corinto (Chinandega), San Juan del Sur (Rivas) and Marina Cocibolca (Granada Islands).
