Are there any new parks that we should know about? Which are the best Parks that we should certainly not miss? Which is the best Water Park? Do they still have swimming with the Dolphins at Sea World? Is it cheaper to buy the tickets for the parks in advance? Do they have any family tickets? Do they have Multiple entry tickets? Which would be the best website to buy tickets from? How expensive is it to rent a car there? What paper work is required for the car rental?

Your in luck! I lived in Orlando and worked at Disney for 3 years. I am sure things have changed since then but I can help with what I experienced. May is a good time. It is brutal in the summer when kids are out of school and it is 90+ degrees.
In my opinion the best park is Epcot. I think there is something there for all ages, which is what makes it cool. The Magic Kingdom is great too, but definitely more for the kids. I have heard, the Animal Kingdom is really cool. It was just opening when I left Orlando. I went on an employee tour and not all the exhibits were open so I didn't really get a feel for it.
If you are into the movies I would go to Universal Studios before MGM/Hollywood Studios. Additionally, if you like roller coasters and super heroes go to Adventure Island it is a full day of fun.
I don't think you can go wrong with any of the Disney theme parks. I believe they still sell a park hopper pass, which will let you go to all the parks with multiple entry. It really comes down to how much money you want to spend on tickets. I am not sure it makes a difference if you get your tickets in advance. The way to save money, stay in one of the resorts and they will typically get you tickets to one of the parks. Or, I know people who have done a time share weekend and received tickets for sitting through the sales pitch. You should also be realistic about how many parks you want to see in one day. I have seen people try to do too much and then they need a vacation from their vacation.
The best Water Park, hmmm. If you want to stay with Disney they have two, Typhoon Lagoon and Blizzard Beach. I really like Typhoon Lagoon. If you want to get away from the Disney parks you can go to Wet n' Wild, which is a great water park.
I am not sure about swimming with the dolphins at Sea World. However, they definitely have swimming with the dolphins at Discovery Cove and I highly recommend it. I had such a great experience! I did the "trainer for a day" package and loved it.
Car rental prices vary depending on holidays and seasons. It am guessing but I would say you could find something on the economy end for no more than $600.00 for the two weeks. I have found that Enterprise is the most cost effective car rental company. You will need a drivers license and major credit card. I am not sure if a passport is needed if you are coming from another country. It is always good to have it on hand just in case.

It is cheaper to buy in advance. You can get many different packages. Google Disney World Ticket Packages, for example, and you'll find them.
Sometimes airlines have ticket/plane/car/hotel packages you can get.

Yes it is a good time. Not so crowded, not so hot yet. New parks are Adventure Island in Tampa, and Universal started last august the Simpson Ride It is cheaper to buy in advance. You can get many different packages.Go to websites for Disney World Ticket Packages, Universal Studios, Bush Entertainment, and you'll find them.
Expedia.com has several packages you can get.
