Siguenza, not too far from Madrid, is a great place to visit. I´d recommend to stay at the Parador there, an old castle that was fully rebuilt (a bit like in old Carcassone but a smaller scale) and where food is good. The Cathedral, which also served as fortress, is very interesting. There are good local restaurantes where good (hevay though) traditional food is served
