Where are you going? Italy is not a city, so habits changes in the different regions. If you will have the chance to go from North to South you will learn this quickly. It's a rich country in terms of culture and traditions with a long and variegate history, which left different 'ways of leaving' in different areas, even if close to each other. You will see this a lot in the food tradition - you can travel 20 miles and even less and find very different 'regional specialities'. I suggest you go to a bar downtown for the evening aperitivo (pre dinner drink) - let's say 7 pm - and check what locals are up to. Of course if you talk Italian it's easier, but Italian people are very social, so if you try to talk to someone in your language and ask what's fun to do in town they will help you out. If you are in a small town you might find folks taking you out with them, eventually. Have fun!
I suggest eating and rining tour way through Italy. If you want to be more like a local in Rome you MUST visit local enoteche(winebars).

It is really up to you. Sighseeing, museums, food, wine, bicycles around, Christian routes, etc. Whatever is fun for you you will find it in Italy. My fav is food & museums!

Enjoy the dolce vita atmosphere, relax and enjoy the Italian's favorite pastime: people watching! This should be done while sipping an espresso or a glass of Chianti in any city or village cafe.
Party with some locals who know where to go and what to do. It's always best to ask the opinion of locals for what is the best to see.
Go shopping for unique pieces, rent a scooter if you want to travel a little differently and of course spoil yourself tasting the yummy Italian cuisine!

Depending on where you going you find different options. The main things however are local food, local museums, sightseeing, beaches, and lots of nightlife that tourists usually don't have time to appreciate.

Mmmm, it depends...but I can suggest to enter in a bar and spend few minutes in to catch an authentic essence of Italian people... Above all monday morning (when all people is chatting about football matches).
Good question! If you are in Rome, do as romans do...yes, in practice: wear jeans, search for locals where from 6pm start "Happy Hour". In Milan, you find that in "Brera", in the centre, in Rome everywhere, in Florence "Piazza Sannta Croce".
