Sightseeing, except the usual ones. Well I think the not so usual thing you see but very commmon in this part of the world is the desert/ sand dunes. You can enjoy the beauty of it. That is, if you are coming from the western part of the world that doesn't have sand dune or desert of this kind. And if you really love nature then I may also suggest that you see and experience the mountain of Jebel Hafeet in Al Ain. The highest in the UAE and made up of big rock formation. Another one is the Zoo. If you are not familiar with arabian deers/ gazelles. Museum, though it is likely very usual but if you love history, then I highly recommend it. Arabian architectures. And of course, last but not the least, is the local culture and lifestyle itself. You doesn't need to know arabic but you will be amaze and enjoy the things that you will see and experience. English is well understood here. Though usual and planned tour, still you shouldn't miss the desert safari. Newly opened Dubai Metro will give you elevated snapshot view of Dubai. Further sightseeing could include aquarium at atlantis or dubai mall, a night view of dancing fountains at business bay and casual walk through palm jumeira. Then there are malls like Mall of Emirates with the SKI-DUBAI, IBN Batuta Mall, Dubai Mall, Wafi Ciy and Lamcy Plaza. Out of a city drive could include Jebel Hafeet at Al ain.
Dubai is Multinational City as others indicated. I think The best sightseeing is by Big Bus Tour. Check their website and you decide:

Take a walk in the Bastakya area. This is the renovated version of Dubai before the oil rush. Also worth visitng is the Heritage Village, Fishing Village & Rulers Old Palace. All the are on the Bur Dubai side of the creek. English will suffice in all these places.
There is just so much to do in Dubai and more people then ever speak English and dont forget Dubai is a tourist destination so you wont have any issues with communicating! With respect to where to go and what to do all i will say is explore explore and explore there is everything for everyone!
You can book a city tour in Big Bus in Deira City Centre. The double-decker bus will take you to various places of interest around the cosmopolitan Dubai.

You may want to go on your own by visiting museums, checking the souqs, check the Dancing Fountains at the Dubai Mall, mall-hop, etc.
