Creating our itinerary for HK trip with the fam. Any suggestions?

Yes, the first day you arrive the city. I suggest to spend time on the island where most of the tourist spots are (The Peak, Lan Kwai Fong, Western Market and Stanley Beach). The second day you can travel to Tsim Sha Tsui which is in Kowloon Island to have a bit more taste of the local side. From here you can go to Mong Kok very easily which is famous for inexpensive items and food. That's almost 90% of HK already. Perhaps you can choose between visiting the outlying island for landscape and seafood or Disneyland (or Ocean Park - theme park) to spend the entire last day.
Well it depends on what you want to experience, because Hong Kong is a very diverse city! You can get to know more Chinese traditions and on the other hand the Western type of lifestyle and night life. Or even a mix of it can do well here.

And probably there is one thing that many tourists had missed for their time in HK, that's her amazing countryside. If these things are what you are looking for, do try to spend 4 days in the city to discover your favourite spot.

Must See: Stanley Market, Temple Street Night Market, The Peak & Peak Tram (do the peak circle walk while up there: website), Big Buddha, Ocean Park, night life at Lan Kwai Fong & Wan Chai, go on a junk boat trip if possible (there is a free one, Aqua Luna, Central Pier 9), Jumbo Floating Restaurant, Aberdeen.
Must Eat: Rat Alley in LKF (Good Luck Thai), American Peeking in Wan Chai, Dim Sum at Lippo Centre.
Loads of hiking if interested: website
Optional: Disneyland (more for young kids), Sham Shui Po (cheap computer goods), Mong Kok markets, central escallator, the lanes in central (cheap shopping), designer shopping in IFC Mall, Pacific Place, Central, Kowloon Elements, Mega Box, Pink Dolfins & Tai O Fishing Village, Trip to Shenzhen across China border (cheap shopping, copies, knock-offs clothes handbags etc, cheap tailoring), star ferry, 8pm light show, Lamma Island seafood.
Other: I'm sure there are probably more items that I have missed, but this is a good start.
Take the children to Australia Dairy Co. at Jordan for an authentic nutritious Hong Kong breakfast to start the day off and then off to Mong Kok. Of special interests are the Goldfish market, Tung Choi Street (Ladies market), Bird Market, Jade Market just to name a few. The afternoon is the best time to go to the street markets because they are then open. Tsim Sha Tsui is unrivaled for shopping, superb dining but the Hong Kong Space Museum will be of special...
