Where's a hip place that a early 30s New Yorker can stay in Paris?

Is the Saint Germain or Latin Quarter any good?

Yes! I would stay either in the 5th or 6th arrondissement: among the Sorbonne University, Boulevard St. Michelle, Jardin de Louxenbourg, St. Germain and the Seine River. It's the most lively area, with lots of nice places where to eat, drink and meet people day and night.
I would NOT recommend the Latin Quarter (5th and part of 6th), but St Germain can be cool. If you want the latest cool, hip place to stay in Paris, choose Mama Shelter, Hotel Amour, or if budget isn't an issue the Hotel Costes.

I would rather suggest nearby the "champs de Mars", a Five minutes travel to the center of Paris. It's comfy and calm
